Alric had already gone through them twice. The cups were still where he had left them, arranged in a line that implied a conclusion he had not written down. The chart beside them held the beginnings of one, ink stopping partway through a comparison that had seemed useful at the time. It did not look useful now. He did not reach for another cup. There was no point in confirming something that had settled. He had been aiming for consistency. What he had achieved instead was a collection. Same grain. Same milling.

Same mash, watched closely enough that nothing had been allowed to drift without correction. The boil had held. The fermentation had behaved, insofar as anything ever behaved. If there had been a mistake, it would have shown itself by now. He looked at the casks instead. They stood where they had been set, spaced evenly, unremarkable in a way that made them more irritating than if one had simply been wrong. Nothing about them suggested difference at a glance. Nothing about them suggested agreement either.

The line of cups disagreed quietly but insistently. Not by much. That would have been easier. Each tasted different, one held a sharper edge than the others, not enough to fault, just enough to notice once it had been noticed. Another rounded earlier, settling into itself with a softness that arrived too soon to be called consistent. A third seemed to hold back slightly, as though it had decided that being correct was sufficient and anything further was hard work. He did not need to taste them again to recall it.

He had already done that part. The chart remained unfinished because there was nothing clean to finish. If one had failed, it could have been corrected. If one had been clearly better, it could have been followed. Instead, each sat within reach of the others, acceptable, complete, and slightly at odds. The only difference was the wood. Alric let his gaze drift across the casks again, not searching for anything in particular, just allowing the thought to settle into something that did not require further testing.

He tapped one and let out a sigh. The casks had even come from the same cooper in the same week. The casks, it seemed, were committed to individual artistic expression. It was not a problem that could be removed. It could be reduced, perhaps. Nudged into a tighter line through effort that would sound reasonable but lean closer toward obsessive. Placement, timing, rotation. Tracking which cask had held what, how long, how often. Replacing them sooner. Replacing them all.

He had already followed that path far enough to know where it ended. Not here. His attention shifted, as it tended to when a system refused to resolve at its current scale. A larger vessel would remove this entirely. One enormous vat for each type of beer. It sat cleanly for a moment. The kind of solution that simplified instead of rearranging the entire brewery and starting from scratch all in the name of consistency. Then it would meet the casks when sold anyway. The beer would still need to be moved.

It would still need to be stored, served, carried out through doors that did not move to accommodate it. Whatever uniformity the vat created would be broken the moment it met wood again. He would not be removing the variation only moving. He let the thought continue anyway, more out of habit than expectation. It was a problem that could be solved but not easily. The current system worked because it moved. Casks could be rolled, shifted, turned when something needed to be adjusted. Staff moved with them.

Work arranged itself around motion, rather than requiring motion to conform to it. A fixed vat would change that. Heat would need to come to it. Boilers would need to be positioned with more care than was practical. Everything would begin to gather around a single point, and that point would not move when it became inconvenient. He considered, briefly, making the vats move instead. Wheels. Frames. Something that could be repositioned when needed. The idea held for a moment, then settled under its own weight.

He straightened and tried to remember what he knew about Burton unions. It was not a single barrel. That was the first problem. It was a system of barrels, all tied together, all piped together. Each barrel fermented beer beneath a pipe that rose from the top, bent over, and emptied into a trough above the row of barrels. As the beer worked, foam and live yeast climbed the pipes, spilled into the trough, and then ran back down into the barrels again through more pipes.

The point was not elegance, the point would be consistency. Every barrel fed the union and every barrel received from it. Yeast, foam, and a little character moved through the whole thing until the beer stopped being a collection of separate batches and became one batch. The larger unions had hundreds of barrels. Alric looked around the brewery and felt his hopes begin to develop architectural problems. Each beer would need its own union. Lager, ale, stout, brown ale anything he wanted to keep distinct.

They could not all share the same yeast, not unless he wanted every product to become well, a union. Each union would be fixed in place, heavy, awkward, and impossible to move once built. And it would not just need barrels. It would need raised troughs, pipes, catwalks, gantries, drainage, foundations strong enough to hold the weight. Room to work above the barrels and between them. And to clean it? The barrels would need to sit level. The troughs would need to run correctly.

The workers would need access above, below and sideways without climbing over one another like desperate squirrels. He glanced around the space as he felt the hope fade. Could I get a custom built building to my own specs here? Would it even matter? He let the thought fall away without needing to argue with it further. The casks would remain for the foreseeable future. The sound of movement had been present for some time, he'd hoped to finish this in time but there was simply no way.

Today the fermentation building was now ready and he was trying to wrap this up before the chaos of the move. Today. A call came from his left first, not urgent, just clear enough to be followed without question. He stepped aside, a labourer rolling a cask past with steady control. Another followed shortly after, the request softer, the response quicker. He adjusted again. A third came through without asking at all.

Alric shifted back a half-step, then another, not because anyone had directed him, but because remaining where he was would have required someone else to stop. Casks moved toward it in a steady line that did not require explanation. They rolled past him, one after another, carried by hands that did not hesitate, set down briefly, lifted again, turned, aligned, moved on.

Hesta stood in the new space, visible through the open threshold, directing placement with the same quiet certainty she brought to anything that required order. She did not raise her voice. She did not need to. The work arranged itself around her instructions without slowing. Here in the main building, Seren managed the flow.

She moved between tasks without appearing to choose one over another, answering questions before they formed, adjusting placement with small gestures that carried further than they should have. A cask was set down slightly off where it had been intended. She corrected it with a touch to the side, nothing more. Alric found himself shifting position more often than standing still.

A newer worker approached with a cask, hesitated for a fraction of a second on seeing him, then chose a path that did not require asking him to move. The cask passed cleanly. Alric watched the motion continue. Seren reached him in the space between one movement and the next. She did not stop fully, only slowed enough that the moment could exist. Her gaze moved over the cups, the chart, the casks behind him.

"And?" She asked blinking at his writing.

"It won't standardise," Alric said.

"Only way to do it would require a full redesign of the whole brewery." Seren looked once more at the cups, then back at him. Tarrow arrived a moment later, a cup already in hand, as though he had been passing through and found a reason to remain. He took a small sip, or perhaps finished what had already been there, and looked at the line with mild interest. Alric just pointed to the cups to Tarrow.

Tarrow considered the cups for a moment longer, then gave a small shrug that settled the matter more effectively than any adjustment to the process could have. He took a sip of each of them.

"All the same?" Alric asked"Aye," he said.

"Same grain, same batch? Each a bit different though." Just over two weeks and his palate is that sharp? He nodded once toward the line.

"Same bones." He said He smacked his lips once, thoughtfully, as though consulting something internal that had not existed a month ago. Seren's attention had already shifted back toward the movement around them. Someone called her name. She answered and moved off. The work did not pause. Alric looked down at the chart again. The ink had dried where he had stopped. The comparison he had intended to complete sat unfinished, waiting for a conclusion that no longer seemed necessary to write.

He set the chart down as Seren approached again. Standardisation, it turned out, required cooperation. The casks had instead become teenagers.

"Well, that was the last thing I could try give the brewery, we'd need to do much to change it and well." Alric said gesturing to the space.

"Time to move I guess." he said.

"Do we start looking for a house?" Seren paused just long enough to hear it.

"A nice one," she said, already turning.

"Proper staff section and all." She added the last with a small smile. Alric wore a small smile of his own and shrugged. She nodded once, already drawn back into the flow of work before the moment could settle into anything larger than it was. Alric remained where he was for a moment longer. Even after the talks with Seren, all that had changed was the senior staff were less formal with him, it didn't change anything beyond that. A cask came through. He stepped aside before it reached him.

The newer staff still adjusted slightly more than they needed to when they passed him, leaving space that would have been taken from anyone else. The others did not. They moved as they had been moving, making room where it was required and taking it where it was available.
